The header is your big chance to suitably impress, we all know what people say about first impressions, so you have to strive to make this one count. You have some really nice examples here, the T-Shirt one in particular caught my eye. It is a little bit old school, what with the plain white tee, the pinned note, etc, but quite effective nevertheless. As to the question of open space, it would be acceptable if it serves to focus emphasis on a particular aspect of the design, like a very special logo or message.
